RECIPE: BAKED SAMGYEOPSAL



The baking trend started picking up when people stuck at home due to coronavirus had already had enough of their boredom and decided to do something to beat the blues.
Eventually, people found a way to turn their favourite savory dishes into bake-able trends in order to easily share with or sell to others.
Baked sushi is in the top trends these past few weeks, sellers popping left and right. After trying it once, I wanted to make my own but supplies for its ingredients are low here in Palawan so I had to let go of the idea. Until I stumbled upon an article talking about a new thing someone is testing out: Baked Samgyeopsal.

I wanted to try it out immediately but I couldn't find any recipes online. So I decided to fuse my sushi bake and samgyup knowledge to make this recipe.

INGREDIENTS

 For the Kimchi Fried Rice:
-1 cup chopped Kimchi
-Kimchi juice (to taste)
-2 tbsp chopped onion
-1/2 cup cubed Spam
-3 cups rice
-3 tbsp butter
-2 tsp soy sauce
1 tsp sesame oil

For the Samgyeopsal:
-2 strips of Pork Belly

Marinade:
-1/4 cup soy sauce
-3 tbsp water
-1 1/2 tbsp sugar
-1 tbsp minced garlic
-1 tsp grated ginger
-1 tsp sesame oil
-1/2 tsp black pepper
-1/2 cup scallions

Other ingredients:
-sliced cheese
-mayo

PROCEDURE

Meat:
1. Thinly slice your choice of meat and chop in bite-sized pieces.

2. Mix all marinade ingredients together and let the meat sit in the marinade for at least 1 hour.

3. Cook in a pan on medium heat for 3-5 mins.

Fried rice:
1. Turn the stove on medium heat. Put butter in the pan. Once the pan is hot and the butter has melted, saute onions.

2. Add the chopped kimchi and kimchi juice. When the kimchi juice has started to evaporate, add the Spam. Toss and stir until the spam has gotten a darker color.

3. Add the rice. Toss and stir until all the rice has turned orange. Add kimchi juice as desired.

4. Add the soy sauce and sesame oil. Keep tossing and stirring for 5 more minutes. Turn off the heat and set aside.

Assemble:
1. Preheat the oven to 350 degrees Fahrenheit (177 degrees celcius)

2. In an oven-safe pan or deep dish, place all the fried rice first.

3. Cover the top of the rice with slices of cheese.

4. Place the meat on top of the cheese.

5. Add mayo on top as desired

6. Bake in the oven for 15 minutes.

NOTES:
-You may skip the cheese or mayo depending on your taste
-Add as much kimchi as you like depending on your liking for spicy food
-You can opt out on the Spam for the fried rice
-Add gochujang if you want some more spice!
-Like the baked sushi that is wrapped with Nori, try wrapping your scoop of samgyup bake with lettuce!
